We produce organic, waste-free, vegetables, fruits, flowers, pastured eggs and raw milk and provide our produce directly to people and restaurants. No middle-man.

We forage wild foods, hunt wild game and hand-milk our cow.

We make long-ferment sourdough bread, raw dairy products, natural wine, pickles and preserves.

We run workshops and dinners, consult and speak about real food, traditional ecological food-raising and pre-industrial food preparation.

We love living like this and we couldn’t imagine it any other way.

It's the first week that our new book #TheVillage is out in the world and on shelves (in Australia & New Zealand) and to celebrate we are sharing a recipe from the book (see page 318-319 for the full experience) and giving away an Ascent Series 2300i High-Performance Blender from Vitamix® (scroll down to see how to enter)!

Although we have just had a -6.5°C degree morning, I am pretty sure that gelato defies the logic of food and is good to eat all year round, despite the weather. And, it reminds us so much of our village - children, adults, adult children who can't wait for gelato to defrost and dig at ice-cream tubs with knives because they cannot patiently wait for the gelato to defrost.  
If you are a gelato purest, where you believe gelato must be made by heating and churning, this gelato isn't for you - rather this is all about ease. We love this recipe because it takes all of 15 minutes to make, it's full of nutrient rich ingredients - including avocado - which despite what it may sound like, makes this super creamy and delicious! We use a high powered blender (we use a Vitamix® - scroll down to enter the competition to win one!) to blend it all together until smooth and aerate the mixture, so it's super smooth and mousse like (this is the key!).
This gelato is easy, creamy, full of dark chocolate flavours and great for the whole village! Enjoy! And enjoy the new book, we made it for you.
